This recipe has all the components of the perfect dish. Not only does it look good but tastes even better. The sauce is absolutely incredible and makes the dish. It has all the components of sweet, spicy, and citrusy that your taste buds will love!

Feel free to add Noodles or rice to the dish!

Sauce Ingredients:

  • 3 Tablespoons fish sauce

  • 2 Tablespoon low-sodium soy sauce

  • 1 Tea spoon Sesame Oil

  • 5 Tablespoons light brown sugar or Honey

  • 2 Tablespoons rice vinegar

  • 1 Tablespoon Sriracha hot sauce

  • 2 Tablespoons creamy peanut butter

  • 1 Teaspoon Lime Juice 

  • 1/2 Clove of Garlic

Entree Ingredients:

  • Shrimp (4-6 oz per person)

  • 1 Bell Pepper

  • 1/2 - 1/3 white onion

  • 1-2 cups of white mushrooms

  • 3-4 cloves of garlic

  • 1-2 Zucchini 

Instructions:

Prep the Sauce:

  • Mix all sauce ingredients in a bowl.

  • Taste and adjust sauce as needed.

Prep the Veggies:

  • Slice Bell pepper, onion, garlic and mushrooms.

  • Use a spiralizer to make zucchini noodles. (About 1 zucchini per person)

Put it all together:

  • In a sauté pan add about 1 tbl spoon of Olive Oil and sauté the Bell pepper, onions, mushrooms and Garlic. (Add garlic last so it doesn't get over cooked. (Cook for 2-3 mins; don't over cook veggies. (Leave Zucchini raw, it will be watery if cooked. We want it to have a crunch)

  • Take Veggies out of the Sauté pan. Now add Olive Oil, Garlic and our raw shrimp.

  • Cook until shrimp turns pink. Once Shrimp is about to be done add our sautéed veggies and 3 Tbl spoon of our pad thai sauce. Kill the heat of the pan and incorporate the sauce with the shrimp and veggies.

  • To a bowl add raw zucchini, Shrimp and veggies. Add an additional 3 to 4 Tbl Spoon of Pad thai sauce and give it all a mix.

  • Optional Plating: Top it off with Sliced Green Onion (Scallions), Red Chili Pepper slices and Your choice of Crushed Nuts (I like candied pecans)
